Microsoft Office 2003 for Law Offices. This outstanding is now out of print (presumably waiting for the 2007 version), but a PDF version is available for $50 from the author.
Legal Users Guide to Microsoft Word. This free guide is the original Microsoft Office 2000 guide to Microsoft Office by Wisconsin Attorney Charles Kenyon. It has been loosely updated through 2006. While it does not cover the changes to the Office 2007 interface, most of the techniques can be adopted with relative ease to the new Microsoft.
